This salad is a combo of warm and cold veggies with a nutritious dressing and sprinkle of sunflower seeds. It’s a nice option if you want something light and nutritious but also warming and filling so perfect if you know your going out for a big dinner or christmas party. You could have this salad on its own, with some rye/wholegrain bread or as a side to some fish or chicken! I’ve been enjoying this recently for my lunch and it’s really satisfying plus my dressing will make you LOVE kale!
Big bunch of kale
Tbsp extra virgin olive oil
Tbsp Apple cider vinegar
Tsp pure maple syrup
12 cherry tomatoes
2 cooked baby beetroots
8 sun blushed tomatoes
2 handfuls sunflower seeds
Start by washing your kale and taking the leaves off the hard stalks. Place all the kale in a big salad bowl.
In a cup or small pot, mix the tahini, houmous, olive oil, apple cider vinegar and maple syrup then massage into your kale completely coating it all. Leave on the side while you prepare the warm part of the salad.
Heat a little olive oil in a pan and then add your halved cherry tomatoes and chopped courgette. Heat for 3 minutes and then add chopped beetroot, sun blushed tomatoes and tsp turmeric and continue to heat for another 3 minutes.
Then when it comes to serving whether your eating straight away or taking some for lunch, half the kale and place half the warm salad on each bowl of kale and finish with your handfuls of sunflower seeds!
