A Day In The Life

Like lots us today, I have many different hats to wear when we comes to my “job”, putting that in quotation marks because I don’t see myself as even having a proper job. I have a life and a career and the two are very much entwined. I’m all about work/life balance and as a Pilates instructor and lifestyle blogger, there’s definitely no 9-5 or even Monday to Friday work week. I might be teaching, organizing events and retreats, writing, shooting, reviewing restaurants, attending a press launch, meeting brands and photographers, researching, travelling and within that I love working out, cooking, seeing my friends etc, so a day in the life doesn’t really exist but a typical day might look something like this.

Delicious Nut Roast Recipe

I of course love to get in the kitchen this time of year. I’m going to my aunties this Christmas and I thought it would be nice to bring something to add to the table. I usually make desserts but this year I’m taking a nut roast. I haven’t eaten meat in a while and to be honest it’s all the trimmings that are the best bit about a roast in my opinion. So I’ve been experimenting with a nut roast recipe and have mastered it with this delicious version. The eggs, nuts, cheese and brown rice in this nut roast are great sources of protein and I also added butternut squash, basil and tamari for a flavour boost…

Yay you’ve made it, to week 4 of my Pilates and Wellness challenge and we are so nearly at Christmas! My favourite time of year! I’m so excited to share with you my best of 2016 Pilates routine this week. Easy Protein Packed Quinoa One Pot

The last month has been so busy that I have slightly neglected my home cooking, my fridge is often pretty sad with half eaten salad bags, some olives and peanut butter lurking in the back. I know this is just for now while other areas of my life take priority and I’m trying not to let it stress me out and still managing to eat healthily. Being busy is definitely not an excuse to get take outs! One evening last week, I had to be creative with store cupboard and freezer ingredients and the finish result was pretty awesome, here’s my leftover protein packed quinoa one pot, it’s an amazing and easy healthy recipe… 

Turmeric Cabbage Scramble

I have recently become more aware of the amount of hidden sugar in things I eat especially in my go to snacks! I love to snack on nakd bars, dried fruit and nuts, dark chocolate, oatcakes with honey, bananas, carrots and hummus and all these snacks are actually quite high in sugar. Yes they are healthy snacks and the sugar is natural sugar but it all adds up and I wanted to find some less sugary snacks! I created this Turmeric Cabbage Scramble. Turmeric is the most anti-inflammatory spice and adds a lovely flavour to this simple green high protein snack. This is a nutritious snack you can make at home in 10 minutes or even turn it into a meal by adding some rye bread and avocado!

My 80/20 Lifestyle and a Summer Body Meal Plan

I get asked about what I eat a lot. For breakfast, lunch, dinner, when out and about so I thought I’d do another daily meal plan post with the focus on a summer body!

I eat dairy, meat, fish, gluten and drink alcohol but all in moderation. That’s the key my lovelies, balance and moderation. You don’t have to starve, you don’t have to cut out food groups unless you are intolerant and you don’t have to just eat lean meat and boring lettuce leaves. I generally have very social weekends, from about Thursday to Sunday there may be dinners out with friends, weddings, parties, roast round my mums. I make healthy choices as much as I can but I still love a good roast chicken, glass of wine and piece of cake!

Monday to Wednesday, I therefore eat a vegetarian plant based diet as much as I can and I love this too! Don’t get me wrong this doesn’t mean I live one way for a few days of the week and then completely gorge on bad food and get pissed at the weekends. That is not a healthy lifestyle. I still eat extremely healthy and clean all week long but I might fancy a good steak at a restaurant or seafood paella and red wine in spain.

I aim for 80/20% ratio of clean plant based diet with some fish,eggs and greek yogurt and 20% wine (joking), the other 20% might be meat, homemade cake, ice cream!

This Monday, I ate this meal plan below which is an example of what I would typically eat when working in the week and also keeping in mind I want to maintain a summer body (feeling confident myself in a bikini), of course this is what we all are after, confidence!

Food Diary | What I Ate Today

Today I am grateful! I love my healthy lifestyle and am so grateful for the nutritious and delicious foods that are available to me. I am so grateful that I actually enjoy making fresh food. When asked whether I feel like I’m ‘missing out’ on eating dominoes pizza or cream cakes or McDonalds as examples, I honestly don’t get it. What do you mean missing out! I don’t enjoy or want those foods. I don’t crave them or feel the need to have them as a ‘treat’. I’m perfectly happy to miss out on feeling like crap, tired, getting bad skin, feeling bloated and unsatisfied. When you start eating healthy nourishing foods your body stops craving all that bad stodge and I 100% do not feel like I restrict myself in anyway. I eat what I love and what I want all the time and I am so grateful that what I want and love most of the time is amazingly healthy yummy food. So for a little inspiration or just for a nose here’s what I ate in day…
