This is my healthy egg salad recipe and it’s so versatile, you can make up a batch and use it on top of salads, in a roll, topped on toasted sourdough, as a side and it makes a great breakfast, lunch or dinner too. I’ve used greek yogurt instead of normal mayo which tastes delicious and I promise you won’t even know the rocket is there…
How To Get The Most From Your Eggs
I always choose free range and organic as they are said to contain more vitamin A, omega- 3 fats and vitamin E and less saturated fat plus I think they taste better. As an ambassador for British Lion Eggs, I also always look for their lion symbol on my eggs as all British Lion egg producers have to follow a stringent Code of Practice which ensures the highest standards of food safety and animal welfare. I have hard boiled the eggs here as I wanted to keep the dish for a couple of days but you could try soft boiling them if you are eating the salad straight away as eggs lose nutritional value when cooked.
I’ve sneaked some rocket into this recipe because we need any opportunity to get some greens too. Rocket is known for stimulating digestion and like all greens has many benefits like boosting the immune system and maintaining eye and skin health. In fact this is a very eye healthy dish as both eggs and rocket contain antioxidants lutein and zeaxanthin which can reduce the risk of loss of vision.
Healthy Egg Salad
6 hard boiled eggs (peeled)
3 tbsp greek yogurt
12 santorini tomatoes (halved)
Sprinkle of himalayan salt and pepper
Chop the boiled eggs and mix in with all the other ingredients.
Enjoy this healthy egg salad in a rye bread sandwich, on a slice of toasted sourdough or on it’s own.
