Okay so I’ve definitely caught the wanderlust bug. With three trips already done this year and three more booked, it got me thinking that I should really be feeling bikini ready all year round but what does bikini ready really mean to me! Kimberly Parsons, author of The Yoga Kitchen, gave them to us for our packed lunch for the journey home from her retreat, so cute, and I instantly made a big batch the day after I got back. With this in mind I decided to create a super simple delicious meal using seasonal greens and my favourite food ever, poached eggs! The last month has been so busy that I have slightly neglected my home cooking, my fridge is often pretty sad with half eaten salad bags, some olives and peanut butter lurking in the back.
