Food prep is key to staying on track during the week and Sunday’s are my favourite days to get organised. I thought I’d share 3 simple things I prep that really help me out in the week when I don’t have much time. This time of year I make sure I keep my motivation by prepping my meals and planning my workouts. As the mornings get darker and the evenings get chillier it’s get’s a bit more of a challenge not too ditch the sweat session for an extra hour in bed and avoid having 3 hot chocolates a day right? 

Healthy Egg Salad Recipe

This is my healthy egg salad recipe and it’s so versatile, you can make up a batch and use it on top of salads, in a roll, topped on toasted sourdough, as a side and it makes a great breakfast, lunch or dinner too. I’ve used greek yogurt instead of normal mayo which tastes delicious and I promise you won’t even know the rocket is there… 

Sweet Potato, Tomato and Pine Nut Salad

sweet potato salad lottie murphyThis is pretty much all my favourite foods in a salad and I would totally add feta too but today I’ve opted without it making this salad a vegan option. I also didn’t have any! Remember making your plate as colourful as possible is what you are looking for. I’ve dressed the base of watercress and quinoa with lemon and dried oregano to make it super tasty and then topped with roasted sweet potato, cherry tomatoes and red pepper. The whole thing is then finished off with pine nuts, sun dried tomatoes, avocado and a crack of pink himalayan salt…

Vanilla Matcha Smoothie

matcha maidenI’m sure you’ve heard of matcha by now especially if you live in London; you can grab a matcha latte at most of my favourite cafes in the city now. So why are people choosing matcha over coffee for their energy fix? Well matcha does still contain caffeine but less than coffee and where the caffeine in coffee gives you a hit of energy very quickly; the caffeine in matcha is released slower giving you more sustained energy. It also have 137 times the antioxidants than a normal green tea as the whole green tea leaves are ground into a fine powder. I love this powder form as I can enjoy my beloved lattes at home and also add it to smoothies and even bliss balls. Here’s my new favourite vanilla matcha smoothie…
