You honestly won’t notice the difference between this delicious gluten free healthy carrot cake to your standard shop bought sugar laden carrot cake. I have such a sweet tooth and this certainly satisfied it even though it only contains coconut palm sugar as the sweetner which is a great alternative to normal sugar as it has a lower glycemic index so won’t make your blood sugar spike.

When it comes to yoga and pilates, I love activewear to be bright coloured, flowery patterned with floating soft fabrics but recently I’ve been doing some more, you could say, ‘kick ass’ workouts and my floral garden leggings just don’t make me feel that kick ass. What I wear when I workout really determines how I feel and perform during the session, it’s kind of like turning up to a coffee catch up on a Sunday with your girlfriends in your job interview attire, you just wouldn’t feel right.

As a young gymnast, teenage ballet dancer and now yogi/Pilates instructor, being flexible has always been part of my life and I can’t imagine what my body would feel like if I couldn’t touch my toes or do a bridge. But what if you didn’t go to ballet school or you can’t do yoga every day yet you want to get flexible, why should you get flexible and how can it change your life?

You Don’t Need Fixing

 

Everyone is always trying to do better and be better. Save more, workout more, stress less, sleep more, be kinder, think more positive, read more, drink more water, be less angry, more fun, more grateful, more motivated, the list goes on. It’s like we just aren’t good enough and constantly need fixing. Well I just want to say lovely, you don’t need fixing!

The thought of having three nourishing homemade meals a day prepared for me for a whole weekend was enough to get me on the Eurostar to Chateau de la Vigne, the fabulous nutritional therapist May Simpkin’s home away from home where she hosts Optimum Living Retreats with friend and fellow foodie, Colette Heneghan. Well I can truly say this retreat offers so much more than I could have dreamed of.

My boyfriend always moans that I never follow a recipe word for word but I don’t really see that as cooking/baking if you do- it’s just reading and following instructors.  If you don’t have something or don’t like one of the ingredients then change it! If it turns out awful then who cares! For instance- my boyfriend said “why did you feel the need to put raspberries in this cake?” he he but for me- the raspberries totally work! They add a sweet fruity gooey texture to this choccie bake!
